Bison Stuffed Peppers
1. c whole grain organic quinoaorganic ground bison (2 packages)1/2 sweet onion, diceda dash sea saltfresh ground pepper3 gloves garlicDrew’s organic medium chunky salsa1 can organic black beansorganic cheddarorganic goat cheese
This is the first time i’ve prepared these and I made WAY too much stuffing but I plan on using it to make enchiladas later in the week. Cook the quinoa and let it boil low for twenty minutes. While the oven preheats (450 degrees) cook the onions in a pan with your choice of oil. (I usually use coconut) and add diced garlic. cook the ground buffalo and just when it looks like it’s nearly done, add the black beans and the salsa. Let that simmer until the quinoa is finished cooking. Mix together in a bowl and then scoop into the peppers, grate the cheeses on top and Bake in a dish filled about 1/4 of the way with water (this helps to cook the peppers) for about 25 minutes.

2 sweet potatoes,roasted no skins 1 Tbsp pumpkin spice Black pepper 8 Ezekiel tortillas Organic arugula 1 onion, sautéed in olive or coconut oilSpread sweet potato mixture on tortilla, grate cheese and add onion and arugula. Bake at 450 for approximately 10 minutes. Yum!

2 sweet potatoes,roasted no skins
1 Tbsp pumpkin spice
Black pepper
8 Ezekiel tortillas
Organic arugula
1 onion, sautéed in olive or coconut oil

Spread sweet potato mixture on tortilla, grate cheese and add onion and arugula. Bake at 450 for approximately 10 minutes. Yum!

Jalapeno-Spinach Meatballs16 oz lean ground turkey1/2 c. shredded spinach1/4 c. diced onion 1 jalapeno pepper, diced1 tbsp minced garlic1/2 tbsp cuminsea salt and pepper to taste
Bake at 405 degrees for 12 minutes, rotating the meatballs at the 6 minute mark. Serve over whole wheat linguini with tomato sauce (see below for recipe), parmigiana and parsley.

1 medium onion chopped
4-6 gloves garlic
28 oz. can organic diced tomato
28 oz. can organic tomato sauce
1 tbsp dried parsley
1 tbsp dried basil
1 tsp black pepper

Baked Chicken Veggie Medley
1 onion1 red bell pepper1 package chicken, cubed1/2 sweet potato, cubed1 cup baby carrots1 broccoli crown1 1/2 cup chicken broth, low sodium (preferably organic)1 TBL oregano, dried1 TBL basil, dried1/2 tsp cayenne pepper4 gloves garlic, mincedsea salt and pepper to taste
Set the oven to 450 degrees and bake for an hour covering the dish with aluminum foil.

1 package chicken, cubed
1/2 sweet potato, cubed
1 cup baby carrots
1 broccoli crown
1 1/2 cup chicken broth, low sodium (preferably organic)
1 TBL oregano, dried
1 TBL basil, dried
1/2 tsp cayenne pepper
4 gloves garlic, minced
sea salt and pepper to taste

Set the oven to 450 degrees and bake for an hour covering the dish with aluminum foil.
