Chocolate Protein Brownies

Guys these are so moist and delicious. I couldn’t wait and ate a couple before I took the picture; you MUST try them.

1 cup liquid egg whites
1 can (200g) of unsalted cooked black beans
3/4 cup chocolate whey protein
1/4 cup cocoa
1/4 cup honey or agave syrup
3 tbsp coconut flour
5 tbsp cottage cheese
1/2 tsp baking soda
1 heaping tbsp peanut butter

Blend ingredients in food processor or blender until it reaches a cake batter consistency. If it’s too watery add a tbsp more of coconut flour until it thickens. Similarly if it’s too thick, add an egg white or two. 

Pour into a small brownie pan for about 45 minutes at 320 F.

Tomorrow marks the first deadline I set myself when I began my fitness journey in February (My birthday). I wanted to get in the best shape of my life. I wanted to look good in a bathing suit and finally I wanted to feel comfortable in my skin. For years I pined after thinness; stick legs and ribs was it. When I started this journey, I wanted to lose fat. But I fell in love with weight training and it’s not only shaping my body into something I never thought it could be, but my mind as well. I have never been happier with my appearance let alone the mental clarity I have acquired. This success is overflowing into every aspect of my life. While my journey isn’t over and my goals are always changing, tomorrow marks a big milestone for me. Next step, a figure competition in October. Here I come!
