Sweet Potato - Organic Goat Cheese Quesadilla
2 sweet potatoes,roasted no skins 1 Tbsp pumpkin spice Black pepper 8 Ezekiel tortillas Organic arugula 1 onion, sautéed in olive or coconut oilSpread sweet potato mixture on tortilla, grate cheese and add onion and arugula. Bake at 450 for approximately 10 minutes. Yum!

Jalapeno-Spinach Meatballs16 oz lean ground turkey1/2 c. shredded spinach1/4 c. diced onion 1 jalapeno pepper, diced1 tbsp minced garlic1/2 tbsp cuminsea salt and pepper to taste
Bake at 405 degrees for 12 minutes, rotating the meatballs at the 6 minute mark. Serve over whole wheat linguini with tomato sauce (see below for recipe), parmigiana and parsley.

1 medium onion chopped
4-6 gloves garlic
28 oz. can organic diced tomato
28 oz. can organic tomato sauce
1 tbsp dried parsley
1 tbsp dried basil
1 tsp black pepper

1 onion1 red bell pepper1 package chicken, cubed1/2 sweet potato, cubed1 cup baby carrots1 broccoli crown1 1/2 cup chicken broth, low sodium (preferably organic)1 TBL oregano, dried1 TBL basil, dried1/2 tsp cayenne pepper4 gloves garlic, mincedsea salt and pepper to taste
Set the oven to 450 degrees and bake for an hour covering the dish with aluminum foil.

sea salt and pepper to taste

Set the oven to 450 degrees and bake for an hour covering the dish with aluminum foil.

Protein Banana Bread2 ripe bananas, mashed1/2 cup rolled oats1 tsp vanilla extract2 scoops Vanilla whey protein powder 3 whole eggs, 2 egg whites1 tsp baking powder1/2 cup almond milk
Bake this bad boy for approximately 40 - 45 minutes at 325 degrees. Cook in a standard loaf pan. Let cool and slice!
